UMSUI international students Gelato workshops

Step into L’ARTE DELLA GELATO on a bright afternoon, and it wasn’t just the hum of the gelato machine filling the air — it was the lively buzz of 40 Melbourne University students gathered for an exclusive gelato masterclass. The event, organized in collaboration with UMSU International (UMSUI) – University of Melbourne Student Union International, was more than just a tasting — it was a full sensory experience.

The star of the day?

Sicilian Lemon Sorbet — bold, sharp, and unapologetically zesty.

Eva, our gelato artisan, began with a crisp introduction to Sicilian lemons — famed for their thick rind and intense aroma, making them the perfect ingredient for a classic vegan sorbet. She explained how every step in the process matters:

• 40°C — gently dissolving the sugar and unlocking the lemon’s vibrant essence.

• 80°C — drawing out the natural oils from the zest, adding depth and fragrance.

• 0°C — the final freeze, transforming liquid sunshine into a silky, icy cloud.

“It’s like a frozen lemon tart — that burst of acidity followed by a soft sweetness.” — Alice, student at Melbourne University.

“Never knew lemon sorbet could be this smooth and flavorful” — Daniel, UMSU International member.

We also took the time to highlight what makes vegan sorbet so special — no dairy, no eggs — just the raw purity of fruit, water, and a touch of sweetness. It’s light, refreshing, and completely guilt-free.

More to Come at L’ARTE DELLA GELATO

The event wrapped up with students snapping photos of their gelato creations and sharing their experiences on social media — a beautiful blend of art, flavor, and community.

Though this particular event was a closed session for UMSU International (UMSUI), it’s just a taste of what’s to come at L’ARTE DELLA GELATO.
